Keto Chewy Pecan Pralines
Equipment
- 1 Medium-sized saucepan
- 1 Candy thermometer
- 1 Parchment paper
- 1 Baking sheet
Ingredients
- 1 1/2 Cups Pecan Halves
- 1/2 Cup Heavy Cream
- 4 tbsp Butter
- 1/2 Cup Granulated Erythritol
- 1 teaspoon Vanilla Extract
- 1 Dash Pinch of Salt
Instructions
- Prepare a baking sheet by lining it with parchment paper.
- In a medium-sized saucepan, combine the heavy cream, butter, sweetener, vanilla extract, and a pinch of salt. Place the saucepan over medium heat.
- Stir the mixture continuously until the sweetener has dissolved and the mixture comes to a gentle boil.
- Attach a candy thermometer to the side of the saucepan and let the mixture cook, stirring occasionally, until it reaches the soft-ball stage. This is around 235-240°F (113-116°C) on the candy thermometer.
- Remove the saucepan from the heat and quickly stir in the pecan halves. Stir until the mixture thickens slightly and starts to lose its gloss.
- Working quickly, drop spoonfuls of the mixture onto the prepared baking sheet. Leave some space between each praline as they will spread slightly.
- Allow the pralines to cool completely at room temperature until they become firm and chewy.
- Once cooled and set, store the pralines in an airtight container.
